It is an old vegetable that is also known as the predecessor of the winter root. Like the winter root, the parsnip can be eaten raw, cooked or stewed. The parsnip has a sweet aniseed flavour. Despite the fact that this type of vegetable is no longer often eaten, especially by the youngest generation, it is all the more popular among the older generation and has therefore not yet been forgotten.
